Sugar Cookies
INGREDIENTS
170 gr mascabado sugar (pulverize to powder, best if done in a Thermomix or high speed blender)
170 gr unsalted butter
1 egg
2 tsp vanilla extract
340 gr unbleached flour
1/4 tsp baking powder
1/8 tsp baking soda
PROCEDURE
1. With electric mixer, (best done with paddle attachment), beat sugar and butter until creamy, add egg and vanilla and beat a bit more.
2. Add flour, baking powder and baking soda, mix on low for a bit. You should have solid dough ready to make cutouts.
3. Roll with a rolling pin to about 1/4 in thick and use your favorite cookie cutters.
4. This makes, depending on the size of your cutters, about 20 cookies.
