Gingerbread Men
INGREDIENTS
142 gr mascabado sugar (pulverize to powder, best if done in a Thermomix or high speed blender)
170 gr unsalted butter
113 gr agave syrup, honey or molasses if you like a darker, more flavorful gingerbread
57 gr maple syrup
1 egg
3 TBSP ground ginger
1 tsp cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
510 gr unbleached flour
1 tsp baking soda
1/4 tsp salt
PROCEDURE
1. With electric mixer, (best done with paddle attachment), beat sugar and butter until creamy, add egg and syrups and beat a bit more.
2. Add flour, spices and baking soda, mix on low for a bit. Refrigerate your dough for at least 30 min before rolling.
3. Roll with a rolling pin to about 1/4 in thick and use your favorite cookie cutters
4. This makes, depending on the size of your cutters, about 30 cookies.
The ingredients listed here are the ones I use, but you can use any type of ingredient you have at home. But for example, using things like coconut sugar, or more maple syrup instead of agave or honey will yield a softer cookie. Real sugar is needed in this recipes. Believe me, I always try to reduce sugar as much as I can, but baked goods suffer in texture. I sometimes add a little bit of allulose instead of sugar, but as little as I can, sometimes just 50 gr.

SIMPLE ICING
To make a simple icing, that hardens a bit and can be used to decorate, combine 100 grs of powdered sugar with 2 TBSP of your favorite milk, mix by hand and use before it hardens. But, if it hardens, add a bit more milk and rewhip.
